Natural sweetener recipe for date syrup that is cheap, healthy and full of good stuff. Date syrup uses are any recipes that call for no refined sugar and cakes like a quinoa chocolate cake. Benefits of date syrup are it contains fibre, inexpensive to make, high in antioxidants and is an excellent natural sweetener.
You don’t have to use the expensive majool dates in this. I’m just using standard dates although you want to use pure dates without any added sugar, oil or preservatives. I’m not sure why some dates have added sugar and oil – I think it’s to make them softer and not stick together, but don’t use them for this. Suitable for paleo, raw vegan and no added sugar diets.
It’s very important to check that the dates have all been pitted. Even if they are pitted dates it’s still worth having a squeeze to ensure. As the pits are so hard just one blended will ruin the date syrup.

This is the liquid sweetener I usually use because it’s inexpensive, has fibre and contains vitamins. Maple syrup is great and looks great in recipes as it’s clear but it’s very expensive. This date syrup I believe is healthier as it’s whole fruit with fibre.
Part of a lemon is used in this, a quarter pealed and a square of lemon rind. This helps to balance out the flavour – just a tiny amount of rind adds a tiny bitter taste gives a deeper flavour. I add the lemon rather than just the juice to add in all the beneficial pith and fibre.
Limes can be used instead in this recipe if you prefer. Just make sure to get untreated and unwaxed citrus fruit. Don’t worry if there is a pip in the lemon – they are perfectly safe to eat.
This syrup can be poured but it’s better spooned as it’s quite thick. I do like a thicker sweetener as you do use less. Maple syrup is so runny it’s easy to pour too much.
I store date syrup in old mustard jars with lids in the fridge. With the natural date sugars and the lemon juice, it does keep for a few weeks. But always smell before using and you will be able to tell if it’s still good.
The term sweetener people usually associate with artificial sweeteners. I’m calling this sweetener to help to reclaim this word from negative connotations. In any of my recipes when I say liquid sweetener I mean something like this or maple syrup.

Ingredients
- 1 ½ / 260g cups Dates
- 1/4 peeled Lemon
- 1 cm² unwaxed Lemon peel
- 1 ½ / 350ml cups Hot Water
Instructions
- Bring just the water to a boil and let cool for 5 minutes.
- Check for any pits in the dates and put everything into a blender.
- Blend everything tother until smooth.
- Pour date syrup into a jar and keep in the fridge where it will last for a month

Dates originate somewhere between Egypt and Mesopotamia. A ripe date is 80% sugar but it’s packed with other good stuff including potassium, fibre and protein. The pits or seeds from dates can be used to make soap and ground to make a coffee alternative.
This date syrup is perfect on healthy protein pancakes.

I also make a variation of your banana and oatmeal cookie into a pancake. I add a touch of ghee, flax seed, hemp, cranberry and lime essential oil – blend it all and cook either in coconut oil or ghee. Love it when a recipe works for cookies, crackers, muffins and pancake. Not sure exactly – depends so much on the dates! But I would say 2 date syrup:1 refined sugar

Hi there, if it’s totally dry it should last a couple of weeks. But you do need to be a bit more careful with date syrup compared to maple or similar as it has added water. Would just blending dates work better?

Only a day or two as it has water in this date syrup so can go bad quickly
I read with interest your recipe for date syrup. I am making a vegan cake that calls for 50g Splenda sweetener powder which I definitely do not want to use. How much of your date syrup would I need to use if I am using 100g flour, please. Many thanks. Barbara Baker
Hi there, as a very rough alternative I would say double the amount of this date syrup as Splenda us 1:1 for sugar – so 100g. Although as it’s wet the other ingredients may need adjusting. Hope that helps

You can, it might not be the best as it still has the fibre from the fruit in it

It’s tricky to make apple jelly with date syrup as you need to be careful it will preserve. What I would do is make freezer apple jelly / jam as then you don’t have to worry about having enough sugar to preserve it

It helps balance out the flavour and preserves the date syrup, can leave out if you prefer
Can you freeze the syrup as I don’t use a lot at a time.
You can free this date syrup, I would freeze in ice cube trays and use within 2-3 months 🙂
Can I still use the date syrup even though it has fermented and half the syrup is foam.

Alas, I CANNOT have dates in the house. When I did a round of Whole 30, I bought a two-pack of Costco dates to use as my natural sweetener. Dates, I discovered, are one of my trigger foods. What is 1 cm2 of lemon peel? Is it like a square about 1/3″ by 1/3″?
Yes that’s it, just a touch over 1/3rd of an inch. But it’s all down to taste really – I often add more than that to get loads of the lovely lemon oils in 🙂
